Pal Appam - (Rice pancake)


Ingredients

White rice(raw)-3 cups


  • Cooked rice-1/2 cup
  • Grated coconut-1 cup
  • Yeast-1/2 tsp
  • Sugar-1 tsp+ 3 tbsp
  • Luke warm water-1/2 cup
  • Salt

Method

Soak white rice for 4-5 hours. Mix yeast and sugar in luke warm water and allow to rise for 10-20 minutes. Meanwhile grind white rice with cooked rice and grated coconut to a fine paste with enough water. Finally add the yeast mixture and blends for 2 seconds. Transfer to another wide bowl which has enough space for the batter to rise. Mix well and keep to rise in a warm environment for 5-6 hours. After the batter has risen, mix salt and 3 tbsp of sugar.

Take a palappam mould( appa chatti), lightly grease it and pour a ladle of the batter into the mould and rotate by holding the handles. Cover with the lid and allow to cook on medium flame till the sides are crisp and center is soft. Serve hot with any meat or vegetable stew or duck roast.

Sweet Corn Chicken Soup


Ingredients

  • Sweet Corn-1 tin
  • Cooked shredded chicken-1/2 cup
  • Water-5 cups
  • Corn flour-4tbsp
  • egg-1
  • Soy sauce-2 tbsp
  • Maggi chicken stock cube-1 cube
  • white pepper powder-to taste
  • salt-to taste

Method

Keep 5 cups water with 1 cube of maggi chicken stock to boil in a vessel. After it starts to boil add the sweet corn and cooked chicken. In another bowl mix cornflour with little water to a smooth paste. Pour the corn flour mixture into the soup and stir till it thickens to a soup consistency. Add the soy sauce. Beat egg well and slowly add the egg into the soup in a thin stream while continuously stirring.add enough salt and pepper powder and switch off fire. Serve hot.

It serves 5 people.


Garlic Sauce


Ingredients


  • Vegetable oil(other than palm oil or coconut oil)-1 cup
  • 1 egg
  • 2 0r 3 pods of garlic
  • 1 tablespoon of lime juice(or to taste)
  • salt-a pinch
  • white pepper-to taste

Method

In a blender,put egg, garlic, salt, 1 tbsp of oil and blend.Then slowly keep on adding the rest of the oil in a thin stream till all the oil is used up. After switching off the blender,add lemon juice, salt and pepper. Blend again for a second and stop.Check the taste and transfer to a serving bowl.
Enjoy with pita bread (Arabic Khubooz) and grilled meat or fish.

Christmas Cake

Ingredients

Maida / White Flour - 300 Grams
Butter - 225 Grams
Brown sugar (Dark) – 250 Grams.
Egg - 5 Nos.
Baking powder - 2 Teaspoon
Salt - 1 Tea spoon
Nutmeg (grated) - 1 Tea spoon
Powdered Cardamom, Cloves & Cinnamon all together – 1 Tea spoon
Almond essence - 3 drops
Lemon essence - 3 drops
Vanilla essence - 1 Tea spoon
Caramel sugar - ¼ Cup
Pineapple Jam - ¼ Cup
Mixed fruits - ¼ Kg. (Dates, Cashew nuts, Almond, Currants)

Method

Items 1,5,6,7 & 8 mix properly and sieve. Out of this take ½ Cup and mix with fruits.
Cream butter and brown sugar till light and fluffy. Then add eggs one by one. Add essences them add maida mix, caramel sugar then fruits.

Baking temp. 110 degree Celsius for 10 minutes, then 130 deg C for 2-1/2 Hours
After baking, take out and pierce all over with a fork when it is hot. Pour ½ cup wine and wrap in foil paper.

Its a delicious Christmas cake.
