Ingredients
White rice(raw)-3 cups
- Cooked rice-1/2 cup
- Grated coconut-1 cup
- Yeast-1/2 tsp
- Sugar-1 tsp+ 3 tbsp
- Luke warm water-1/2 cup
- Salt
Soak white rice for 4-5 hours. Mix yeast and sugar in luke warm water and allow to rise for 10-20 minutes. Meanwhile grind white rice with cooked rice and grated coconut to a fine paste with enough water. Finally add the yeast mixture and blends for 2 seconds. Transfer to another wide bowl which has enough space for the batter to rise. Mix well and keep to rise in a warm environment for 5-6 hours. After the batter has risen, mix salt and 3 tbsp of sugar.
Take a palappam mould( appa chatti), lightly grease it and pour a ladle of the batter into the mould and rotate by holding the handles. Cover with the lid and allow to cook on medium flame till the sides are crisp and center is soft. Serve hot with any meat or vegetable stew or duck roast.
